I am attempting a slow smoke on this pork loin to turn it into Canadian bacon. It's been wet curing for about a week. Never done this, but other bacon has turned out great. I'll see how this goes.
I'll be prepping some venison & goose for jerky today, too, to make room in my freezer for whatever the upcoming autumn brings this way. I wanted to have that done already and smoke all of this at once. Bulk meat slicing just wasn't in the cards the last couple of days. I feel much better today.
