They argue that people do not have negative reactions to sulfur without recognizing that sulfur decreases your body's ability to process histamines and can lead to allergic-like reactions after drinking wine. My Estate Pinot Noir is a thin-skinned grape and I use minimal sulfur in producing it. If you get headaches from drinking red wine, this Pinot's for you.
