super chilly here so i made soup for breakfast
spicey sunshine soup
really bright, aromatic, light, and hot!! good for banishing winter blues. if i had mushrooms i woulda used em but i didnt have em.
comes together really fast for soup if the broth part is readymade (i used kettle & fire's lemongrass ginger beef bone broth)
ok so order of operations:
cut up one big yellow onion
saute that onion in some olive oil
as it is cooking, slice up shallots and add them
let that be for a little bit
squeeze in the juice of half a lemon and some salt
add the broth
as that is coming up to temperature,
grate garlic cloves and ginger into it
separately chop up fresh tarragon, parsley, cilantro, mince the garlic cloves you cant grate anymore cos it doesnt spark joy cos your arm is tired, same with some ginger sliced super thin and w/o the skin (i grate ginger w/ the skin on, it's fine) squeeze some lemon juice and a little bit of salt and just immensely enjoy that on the cutting board like minced all up and stuff, this is a really stellar combo of smells so you have to enjoy that, it is part of the soup making
the broth should be about boiling by now, add two ramen noodle packets (discard flavor packages) in about a minute turn off the heat entirely, stir in a whole bag of spinach, add the mixture on the cutting board, a heaping teaspoon of chili crisp, some squirts of a ginger soy dumpling sauce, put some in a bowl, get some scallions on there, enjoy so very much!
