They’re seasonings made by fermenting and aging rice koji. I use them to season stir-fried vegetables and soups, and I also mix them into natto.
Marinating meat in them helps make it tender 😊

I think there are probably very few people in Japan who make their own natto. However, I like it because it turns out nice and chunky, with big beans that are satisfying to eat😊
