I bought a pineapple a few days ago, but it wasn’t as sweet or juicy as I’d hoped. So, I decided to make the best of it by turning it into Kaeng Som Kua Sapparot (แกงส้มคั่วสับปะรด), a Thai sour curry with pineapple. It’s usually made with shrimp or mussels, but my grandma always said “you can swap seafood for chicken”, and honestly, it worked out great! The curry is tangy, spicy, just enough sweet from the pineapple and very forgiving just like my grandma! Gosh, I miss her! 🥹
