You literally sign the notes you're attaching ecash to. And you're doing it every time. They can discard your notes and just keep the ecash. Vs just paying once, actually anonymously, for a npub that may not even be yours to whitelist it in a relay.

And how would anyone know they're my notes if I don't sign them?

This is for nip-17 or MLS type messaging or using DVMs, not for public posting - for those use cases whitelisting npubs works great 😅
