I think most people just see it as the lesser evil? Trust something from the community rather than an institutional bank - perhaps? Plus, not everyone can opt into full self-custody, so I guess they trust it because... it's their only viable option. Just a guess though. I wouldn't trust any of them myself, but I also can host my own node/s just fine. Others can't, so it's probably the "better" option for them. Though didn't Zeus recently introduce their pocket-able LN node? This sounds like a great alternative, to me.
