How would you be able to know that your note (decrypted by their relay) is served to client applications other than your own? The decryption is the proof which is handled by their relay, not your client. They absolutely can serve the data because ypu are not calling the events from the source and decrypting them yourself. (And calling people gaslighters, deceitful, or cowards doesn't change that fact.)
