I am taking advantage of this polar vortex to freeze concentrate my apple wine.
The image below shows a semi frozen pail of apple wine / cider which I made from the pressed juice of apples collected in the orchard 2 months ago.
The middle pail is actually 2 pails separated with a spacer. The upper pail has holes drilled in it to make a large cullender, which is also a component of my homemade cider press.
The upper pail contains the concentrated apple wine (apple jack) with the ice removed.
Here is a close up of the removed ice. It also acts as a filter which removes a lot of the yeast and apple sediment.
