Will we have to use square or can we use any lightning wallet?

You can use any Lightning wallet. Square enabling bitcoin just gives the merchants an easy way to accept it. I tested it at the bitcoin conf in Vegas and it was very nice.
Is it just a matter of asking a merchant if you notice they are using square terminal?
