But if you keep watching, it will still disappear over that curved edge. You are literally only making your eyes see further with instruments and the horizon does not change.

Because you literally extend your ability to see. The curve just moves further back because you can see farther. If the earth was flat, that would never happen, they would never go out of view. The earth curves at roughly 8 inches per mile. You cant measure that physically because as you move, you follow the same curve. But, using tools like survey equipment, you can.
It's literally measurable. Please show me a picture of the edge of the earth.
