I wouldn’t recommend 72 hours right off the bat. I’ve done 36. That was enough. It’s better to break a fast with local seasonal fruit if you have it. Concord grape juice as well for liquids in between.

I guess everyone is different, but I find sugary foods, even healthy ones, can be problematic.
For me I find it best to start with fats and proteins. Bone broth is perfect, followed a bit later by eggs, avocado, meats.
Always small portions, always eat slowly and save the "quick carbs" for later in the day.
