Minimum wage in where I’m from is okay but nowhere to the point I can just switch up OS.. what is the big difference?

In terms of functionality, probably not much.
The point of the original note is about choosing systems with more freedom instead of ones based on centralized control.
Apple products are always overpriced (compared to computing power) and aimed at people with plenty of spare cash.
