I have phones here running Linux distro’s
But to be used daily, that’s a real pain in the ass
But why is GrapheneOS not that free as Ubuntu Touch or PostmarketOS for example?

Because it run on proprietary SoCs. Of course Intel or AMD platforms are not free as well but at least they are open platform.
Beside smartphones are made to control and milk users, while desktops are still for produce things
