I was wondering about that. Like if you followed a winemaker-like schedule you could make a batch every month or two and mellow it for a year before selling it. But anyway, 2 months or 2 years. I kinda like paste more than extract now.

Batch 0 was from our personal stash of vanilla that we use here all the time… I indeed plan on making aged batches like that and plan on them being very special releases… I pretty much only use our vanilla paste as well but some of our personal extract is starting to be as enjoyable for me after about 2 1/2 years… real extract takes a very long time and it’s never really the same across batches…
