thinking the best we can get to is 1. current block’s hash to prove the message was constructed no sooner than the block 2. open time stamp to prove the message was constructed no later than the timestamp

ie, even if i mess with the “created_at”, if my note includes the hash of block 778312, you know my note was written at some point after that block. if my note also includes an opentimestamp, you know my note was written before that timestamp. still has the limitation that i may create a note with the above and not broadcast it until later so may need a better chain anchor.
