Thanks. Notice most recipes are cacao and water sometimes with a drop of milk...what if we substitute milk for water initially??

Yeah for sure. Important that if you are serving just one cup then only boil one cup of water to not over dilute the cacao. Adding your preferred milk option to the brew is an experiment you can undertake, but without is still an exceptionally creamy experience because of all the fats in the cacao. Blender is the secret touch to take it to max levels of creaminess if you are that way inclined.
