So on the "investor pullback" scenario: So I guess the funds aren't "2-of-2" multisig addresses? How is it structured to allow for the investor to withdraw funds, "with penalty"?

We like to call it the recovery. It is basically like a covenant one of the tapscript branches is a 2of2 multisig, the founder creates a trx that spends the 2of2 to a timelock + investor key and sends back the signature of such a trx, when the investor wants to pull out and recover they their funds they just spend that covenant.
