Are they even allowed to milk the holy cows?

Yeah that's part of why they're holy. Though to me, the unholy thing would be not to eat them afterwards. My belief is that cows were worshipped, i.e. respected, because they sustained life. But religious leaders and aristocracy renounced the practice of eating the cows because they thought it made them better than the masses.
