Yep hardware level bypass is a thing. I harped about the Intel management engine on intel chips (and has same and I'm sure apple silicone does too) that allow access to your hardware (including networking) without you even knowing it. I'm suspecting thats how snowden could see people mouses move from the CIA computer, and see everything others did.
