You have to start by doing it at small scale. Proof of work should do most of the selling.

How do you start a buffet restaurant,that accepts sats, and fills a market void, small scale though?

You start with a lemonade stand at a Bitcoin conference. Or you do like @Oshi (推し). People have to know you're serious and capable. Before you try to sell them the idea they should be the one looking for a way to help you because they want to contribute in the growth of your ambitions. Then you sell them how they can help you by pitching the buffet.

Just start. Start small. See proof of small demand and keep going. Keep improving. Keep innovating. Keeping having fun along the way and before you know it you’ve built something worthwhile
