Idk how that's possible. When people become unemployed the consumer engine will stop, and that will trickle up. Where will these AI companies get their profits when the economy slows to a halt?

Good question.
The economy will likely shift towards energy and compute. That is, the companies that require an increasing amount of energy/compute will need to purchase an increasing amount from the explorers, producers, builders, distributors, etc. of the energy/compute.
Even though the marginal cost of production will trend towards zero, the exponential increase in need for such things will be the primary drivers of the Digital economy.
