The long term value of 1 BTC is NOT “price of all assets divided by 21 million”.
Bitcoin is money. Money (as unit of account) is a measuring device. Not the object to be measured (=all assets of the world).
We do not have a single measuring stick that reaches to the moon. Yet we can measure that distance and describe it in meters.
