We cook each variety separately and blend after. I think the Jonathan's cook slower than the others, so we'd get some scorching if we mixed varieties while cooking.

Interesting... that sounds like a "pro tip"!
That's what my in-laws tell me. I definitely noticed differing cook times though. Macintosh cook fast
