Meat production aims for tender meat and fast growth. There's no carbs in meat. And yes, there is a good chance that domesticated cows are less healthy than wild animals but I never heard of anything except for hormones and antibiotics fed to cows for growth. Genetically, life stock might grow fast but has essentially the same composition as other animal species.
