If rsync from macOS to Linux hangs or shows some weird behavior it’s because there is a clear mismatch between the implementations. Modern MacOS changed from the Rsync published by the Samba project to OpenRsync published by the OpenBSD project. Licensing drama as always and it seems both programs don’t really talk to each other very well on their defaults. To avoid the problem you can set the --protocol= flag on MacOS (or OpenBSD). I think --protocol=29 should work and if not try 28.

You can encrypt a volume using LUKS while keeping the headers on a separate file. That way the data will be Indistinguible from random gibberish.
