Syrup was getting darker for season. Rt. 7 day warm spell no sap. Hard freeze and thaw. Back to light syrup.(left) If u don't know what I'm talking about you need #foodintelligence @modernTman is doing it with @beefinitiative but all food products have been captured by industry image

3rd and final of the night. Got done early, averaged about 150 gal. of maple sap each round. Got a hilly area done. Legs tired and arms stretched. It's why I like bitcoin "proof of work" Gonna be a great batch of syrup. image

Sap started running again from trees. Freeze at night and thaw in day brings the sap. It's gonna be a busy couple weeks. image

My job with the family today. Go to 650 trees and turn bags and buckets upside down. Maple sap is like milk, if it gets warm it will spoil. Warm spell in Ohio, it will freeze Wed night and sap will run. Making sure any little trickle of sap doesn't sit and spoil next 3 days.

And this is why we went through 1 steer, 2 pigs, about 50 chickens, and 3 doz eggs per week last year. I'm 6'2", Thing #1 is 15 years old. Thing #2 (not pictured) is 8th grade and just shy of 6' They eat well. image

Two ways to test if syrup is done. Refractometer and hydrometer. Ohio states maple syrup needs to be 66-68 Brix (% sugar). IF less it could ferment, more and could crystallize

Being a coffee guy and beer guy #[0] there are treats not many experience. Coffee in a French press using sap straight from maple tree a couple weeks a year. Or homemade beer made with maple sap instead of water. My sap always runs about 2% sugar. image

Filter and bottle day. 2 gravity maple syrup filters and each has 5 paper pre-filter that get out larger particle so main filters don't clog. Every 1 or 2 gallons pull 1 paper filter out. image

Well #[0] getting bottled today. Interested in barter? I am not a wine drinker but have 1-2 bottles a year, probably merlot to go with steak. Once every 5 years we have extra grapes and make farmhouse wine, concord grapes, extra sugar and natural ferment, a lot foxy, but also do some hard cider every year, no additions natural ferment. Message how much syrup for some wine and where to send it. I will Definately send you 2 types from same trees. Wine isn't only thing with terroir, with syrup from Ohio with our great soil. And differences year to year, and nuances in the same year from same trees. Syrup for me is $15 a quart and usually $20-$25 at market. Let me know. image

Brining pork belly with kosher salt and homemade "cooking" maple syrup from last year. 1 T of each/ lb. Fridge for a week and smoke over apple wood. "Cooking" syrup comes at the end of the season. Very dark and has an off taste from a metabolic change in trees when they start to bud. I don't eat it straight on stuff. but works great for brines. Heavy sauces, and cooking. Great natural sugar substitute. image

With a nym like #[0] you definitely need syrup for sats. Bottling this weekend and sell as much as possible for bitcoin.

Looking in the fire chamber to cook maple syrup. The drop fins on the back pan add surface area and allow flames/heat way to get to chimney. That pan boils the hardest but is when sap is low concentration sugar.. It's called a flue pan. #[0] #[1] Maple Syrup and Sarah's soap samples coming to bitcoin park soon. image

Posting a loss. And that is a scorched front pan. Happened within minutes, I left a valve closed. I lost a gallon maybe 2 of syrup. Front pan is separate so rest is fine. I have a 2nd front pan for cleaning and occasions like this. You aren't a sugarmaker till you burn a pan. Not 1st time. image

This is a grader. Three bottles on left are standards. Last batch is right. Graded very dark. Had for breakfast and was amazing. 1st batch graded golden which was lighter than one on left. Will be bottling today and listing prices this week. And yes they all taste a little different, and all great. image

Got a little freeze last night. Mostly water freezes in the sap bucket. This concentrated the sap and helps me to less boiling. This sap tested at 3 % sugar instead of the normal 2 to 2 1/2 I usually get. image
