Bacon is sliced and put up in the freezer. Still have 2 more to cold smoke and slice, plus bacon ends to grind for use in meatloaf. From scratch living is rough... :) #homesteaders #lftn

Last night, I did a test run of scotch duck eggs. I found a wheat free recipe that uses chicken flour instead of flour. OMG why have I never made these before? Basically, you hard boil the eggs, spice and mix your ground meat, coat the egg in the ground meat, dredge in chicken flour and bake. the egg retained moisture which made the yoke not "dry" like in a normal hard boiled egg. the chicken flour crisped the outer part of the whole thing nicely. Baled at 350 for 15 mins, turned, then another 10. image

Something cool happens when you get out to events. you meet people. Bridgette has been living in her van and wandering to different homesteads to lend a hand. Her heart pulled her to NC after the flood where are has stayed to.provide aid since OCTOBER THIS is a long run and she has certainly helped many people. Along her way home, she paused in the Holler to see what she can do here and found my stash of seeds that comes out for seed exchanges. We will be staring a tray of various herbs before dinner... image

GM friends and #coffeechain. This little guy is developing some pizazz and attitude. most of today will focus on finalizing business expenses coding for tax prep (vomit). This has been both the easiest year for tax prep and the most tedious. I also need to get the speakers for the Spring workshop the promo stuff to sell our last few tickets.
