The cold temperatures and just the right humidity conditions this morning had pillars of illuminated suspended ice crystals shooting skyward from any light source on the ground. #alberta

Fourteen two person servings of pressure canned garlic/Montreal spiced potatoes are done. Great for tallow fried hashbrowns or to mash with butter and a little bit of sour cream and milk. In really lean times I figure this could be stretched into two weeks of food for two. But of course we’d grill up whatever small game could be had as well. One more day long session and I’ll have used up what spuds we grew last summer. Yes I could have bought an equal volume of potatoes from the grocer and saved time not tending a garden, but it’s self sufficiency we are trying to increase a little bit each year. #prepstr #grownostr

Glamorous Friday night. Prepping for pressure canning tomorrow. I feel like that poor sap in the navy trapped below deck peeling a mountain of potatoes in a small room. This will be 14 quarts of shelf stable garlic and Montreal seasoned cubes by tomorrow afternoon. I pulled out a quart from 2023 to sample a few weeks ago and fried them in a pan with beef tallow. Great hash browns. Despite not being a carb fan, potatoes have gotten millions of people through harsh times over the course of the last 1000 years. #prepstr #grownostr

It’s interesting listening to analysts measuring “the short term for Bitcoin” as being a period of 5-20 years. A period that is longer than the life of the protocol itself, and longer than the remaining years of life for many current Bitcoiners. So early.
