I loved aged ribeye. 30-45 days is the sweet spot for traditional aging. if you have a steak you can’t get to, it’s way better to open it and set it on a real in the fridge than to leave it wrapped up. Buying them aged at store often feels exobatant. Try aging a hunk yourself - it’s more forgiving than you’d expect.
