Question for Bitcoin LN node operators: - Do you use all of your Bitcoin fortune as liquidity for your node or you have some percentage stored in cold storage as well?

I have had a hardware failure with my home server hosting my bitcoin lightning node. I can't live with downtime like this so I've setup a new permanent node in the cloud with my data. I will be running the node in pruned mode (60GB) and it is now synching the blockchain (couple of hours to complete)...

Anyone know what was the highest bitcoin fee in sat/vbytes for medium priority in mempool that occurred in the past? I'm asking to guage if 40 sat /vbytes is high.
