Okay here is what I did for my rack of lamb…
Preheat oven at 375 F
prepped cast iron with light olive oil, couple Tablespoons of butter, & 2 rosemary sprigs and got it searing hot
- pulled the skin off the back of the rack
- seared the whole rack for 4-5 minutes on both sides
While searing I prepped the maple mustard (compliments to Kristen Cavallari cookbook but I heavily modified most the recipe )
- 3 Tablespoons Dijon mustard
- 2 Tablespoons maple syrup
- 1 tsp Italian seasoning
- 1 tsp fresh chopped garlic
- 1 tsp reg paprika
Mix and spread sauce across both sides of the rack after searing
Chop some new fresh rosemary up and sprinkle across the top of rack
Save a little of the maple mustard on the side for dipping (it’s fireeee 🔥)
Put the entire cast iron & rack as is (took out the rosemary sprigs because they’re pretty much burnt after sear) into the oven
Cook in the oven at 375 F for 15 minutes
Flip the rack of lamb over to the other side and put back in the oven in cast iron as is and cook for another 10-12 minutes
Turn off the oven but leave in the oven for another 5 minutes
Pull out of oven and take the entire rack out of cast iron pan and put on cutting board, letting sit for another 5 minutes (check temp with meat thermometer and cooking safety temp/times online- I like mine Medium)
Cut into individual lamb chops
Serve with dipping sauce

One of my favorite parts of my career, when I’m doing field work, is I get to teach kids how to build toy engines and it’s an incredible experience every time
when you see the light bulb click in a kids brain that, after a few hours of work, they can take a power source and turn it into a machine with a motor and lights- something changes in them

The most profound scene in Mr. Robot is actually within the first 15 minutes when you, the viewer, is led to believe, at first, that Elliot is in it for the money
We quickly find out, however, that Elliot could give a fuck less about the money
If you’re very good at spotting diagnostic criteria, you know that Elliot has a co-morbid dx of both DID and OCD
The only reason this is important to you, the viewer, is to help you grasp two things 1) Elliot is neurobiologically wired (as a result of trauma) to be hauntingly good at hacking
But more importantly, the OCD makes him both obsessive and compulsive
Which means that Elliot. Can’t. Stop.
So, rather than hurt innocent people, Elliot pursues the scum of the Earth (like the child predator we see get arrested in the first 15 minutes of the show)
This has nothing to do with anything except that Mr. Robot is one of my favorite tv shows because almost no one actually understands it.
But I do because I appreciate art that displays surgical like precision.
