Oh I feel dumb. I couldn't get any output using DisplayPort on a 3 monitor setup, only HDMI workred. The monitors using DisplayPort were not even being detected. Are the displys bad? An issue with GPU? Nope. Apparently the monitors have a DP video out port.... 🤦‍♂️
