Low-fat era pushed carbs as “healthy” fat replacements.
• USDA’s dual role:
Promotes big Ag = US subsidizes massive grain surpluses to feed the masses on a budget (wheat, corn)
• Lobbying:
Grain industry pressured changes; original draft had just 2-4 whole grain servings… bumped up to favor producers.
🚨 Result:
Boosted processed carbs, contributed to obesity spike.
