Chicken curry w. goat cheese & cashu nuts =================== Haven't done a chicken curry for a while. Today I mashed together what I could find in the kitchen. It went really well, so here's a note to future self and for you home cookers. Per serving: 1 good piece of leftover chicken 1/2 onion 1 clove garlic 1 dash of chicken broth 1 tbsp of ghee 1 tbsp of olive oil 1-2 tbsp of curry 3 tbsp goat cheese Golden raisins Cashew nuts Salt + pepper Served with jasmine rice Heat chicken in a pot. Add chopped onion and ghee, keep heat low. Add curry. When onion goldens add olive oil and chopped garlic. Then add chicken broth. When boiling 5 min. add goat cheese and stir carefully not to get the cheese stuck to the pot. When cheese has melted into the sauce add salt + pepper to taste. Add cashew nuts and raisins and serve on rice. Bon apetit! #foodstr #recipe
