Over the past two weeks ran a fermentation experiment. Fermented ginger and lemon in honey:
Opened it up yesterday and mixed two tablespoons with a glass of soda water, an absolutely amazing lite ginger beer!
It was sweet, but not cloying, the ginger flavor is well balanced, and just a hint of that fermented funk (for lack of a better word). The lemon barely comes through at the finish, which is what I hoped for.
Now to get a bigger fermentation jar, and start full scale production!
