Homemade chicken cutlets are a fav of my girls ... Start by getting boneless skinless chicken thighs... using a mallet pound them thinner and same thickness ... next make the seasoning mix, 1/2 tsp salt/onion salt combo, 1/4 tsp black pepper, 1/2 tsp smoked paprika, 1/4 tsp dried thyme flakes and 1/2 tsp of fresh garlic, 1.25 tbsp of olive oil ... Rub in till all thighs coated evenly Make a breading station with breadcrumbs, beat 1 egg with a lil milk and lightly dust the thighs in flour .. take floured thighs and dip into bowl of egg till well coated then dredge in breadcrumbs then pat till thighs are not wet.. Heat up a shallow frying pan with some bacon grease .. yeah that's right .. and a lil canola oil .. when oil is hot place thighs in pan to light golden brown, flip em over ... Remember don't overcrowd the pan or temp will drop too much and the cutlets will simply soak up grease instead of frying on it .. place cutlets onto an oven pan and cook @ 275°F for about 25 mins Finish with fresh lemon wedges on the side if you want or simply slice a fresh bun and use some aioli and fresh arugula for a great sammich If you try the recipe leave a zap and a comment, tell me how it turned out for you...
