* laurel
* kosher salt
* black pepper
* dry white wine
* rice vinagre
Make a paste, add olive oil (lard is better but I've run out of it) and gently massaaage (Ok, I've just made that up! 🤪 but I think you catch my drift!)
Cover and let it sit in the fridge for at least 4 hours.
