This is coming late. I made something 2 weekends again that I am extremely proud of. I made “moi moi”, a Nigerian delicacy made from blended beans, spice, onions and any combination of protein you love. Mine was made with boiled mackerel fish.
I always make moi moi but what made this one special is that I wrapped it in banana leaves instead of plastic. It takes skill to wrap it in banana leaves. It was my first time and I did so well. There were little leakages but it came out great.
With the banana leaves, an amazing aroma filled my home. Oh my! It smelled so healthy and therapeutic. I won’t be going back to using plastic to make moi moi anymore 😀.
